Fresh Garden Salad
Ingredients:
- 2 cups mixed greens (lettuce, spinach, arugula)
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1 carrot, shredded
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup toasted nuts (almonds, walnuts, or pine nuts)
- 1/4 cup dried cranberries or raisins
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
Prepare the Vegetables:
- Wash and dry the mixed greens thoroughly.
- Slice the cucumber into thin rounds.
- Halve the cherry tomatoes.
- Shred the carrot.
- Thinly slice the red onion.
Assemble the Salad:
- In a large bowl, add the mixed greens as the base.
- Layer the cucumber slices, cherry tomatoes, shredded carrot, and red onion on top of the greens.
- Sprinkle the crumbled feta cheese over the salad.
- Add the toasted nuts and dried cranberries or raisins for a touch of crunch and sweetness.
Make the Dressing:
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
Toss and Serve:
- Drizzle the dressing over the salad just before serving.
- Gently toss the salad to ensure all ingredients are coated with the dressing.
- Serve immediately.
