Easy Salad Recipe

Fresh Garden Salad

Ingredients:

  • 2 cups mixed greens (lettuce, spinach, arugula)
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 carrot, shredded
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup toasted nuts (almonds, walnuts, or pine nuts)
  • 1/4 cup dried cranberries or raisins
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables:

    • Wash and dry the mixed greens thoroughly.
    • Slice the cucumber into thin rounds.
    • Halve the cherry tomatoes.
    • Shred the carrot.
    • Thinly slice the red onion.


  2. Assemble the Salad:

    • In a large bowl, add the mixed greens as the base.
    • Layer the cucumber slices, cherry tomatoes, shredded carrot, and red onion on top of the greens.
    • Sprinkle the crumbled feta cheese over the salad.
    • Add the toasted nuts and dried cranberries or raisins for a touch of crunch and sweetness.
  3. Make the Dressing:

    • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  4. Toss and Serve:

    • Drizzle the dressing over the salad just before serving.
    • Gently toss the salad to ensure all ingredients are coated with the dressing.
    • Serve immediately.
