Mediterranean Quinoa Salad
Ingredients:
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
Cook the Quinoa:
- Rinse the quinoa under cold water.
- In a medium saucepan, bring the water or vegetable broth to a boil.
- Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- Remove from heat and let it cool to room temperature.
Prepare the Vegetables:
- While the quinoa is cooling, dice the cucumber and red bell pepper.
- Halve the cherry tomatoes.
- Finely chop the red onion and fresh parsley.
- Slice the Kalamata olives.
Assemble the Salad:
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, olives, and parsley.
- Sprinkle the crumbled feta cheese over the top.
Make the Dressing:
- In a small bowl, whisk together the olive oil, fresh lemon juice, red wine vinegar, minced garlic, salt, and pepper until well combined.
Toss and Serve:
- Pour the dressing over the quinoa and vegetable mixture.
- Toss gently to ensure all the ingredients are evenly coated with the dressing.
- Serve chilled or at room temperature.
