Mediterranean Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Cook the Quinoa:

    • Rinse the quinoa under cold water.
    • In a medium saucepan, bring the water or vegetable broth to a boil.
    • Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
    • Remove from heat and let it cool to room temperature.


  2. Prepare the Vegetables:

    • While the quinoa is cooling, dice the cucumber and red bell pepper.
    • Halve the cherry tomatoes.
    • Finely chop the red onion and fresh parsley.
    • Slice the Kalamata olives.
  3. Assemble the Salad:

    • In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, olives, and parsley.
    • Sprinkle the crumbled feta cheese over the top.
  4. Make the Dressing:

    • In a small bowl, whisk together the olive oil, fresh lemon juice, red wine vinegar, minced garlic, salt, and pepper until well combined.


  5. Toss and Serve:

    • Pour the dressing over the quinoa and vegetable mixture.
    • Toss gently to ensure all the ingredients are evenly coated with the dressing.
    • Serve chilled or at room temperature.
